The Master Class is a new initiative. *Adult & Child course A fun day with plenty of instruction about dough, proving it, shaping it, and finally baking it. The programme is a mixture of real breads and light-hearted ones like animal shapes. Parents, aunts/uncles, indulgent god-parents, or family friends – all giving a treat to a youngster, with room for four sets of you around the work table. The lower age limit for the child is eight. *Apprentices Day Every Thursday I am using Cann Mills flour to make bread for retail sale in the Shaftesbury neighbourhood shops and stores. Trainee bakers are welcome to join me, and it stands as a perfect opportunity for the PANARY alumni, experiencing the tempo of proper bakery production and smartly gaining hand skills on the table and oven. The fee paid to PANARY is the same as the one-day course fee, but I set it on a sliding scale for “apprentices” who come for several weeks in a row. PANARY will also help by arranging accommodation. *The Bakers’ Tour in France Travelling by Eurostar train to Grenoble, we then transfer to a people-carrier car and visit our first bakery situated in a fifteenth century flour mill. We then head south, journeying down the Rhone. There are visits to three more craft bakeries, a pizza baker, morning markets, a stone-grinding flour mill, and the Fayol factory that makes the superb masonry ovens I handle as their UK agent. A week of Provencale flavours and treats before we return to Grenoble to take our train home.
